grub-install が "Could not prepare Boot variable: Read-only file system" というエラーを返し、live 環境が正しく UEFI モードでブートされている場合は、efivars という特別なマウントを読み書き可能な状態で再マウントしたうえで先述の grub-install コマンドを再実行できるはずです:
