Is there a way to declare variables on the wiki similar to: {{#vardefine:variable|variable content}}? The use case I had in mind was setting something like kernelversion=6.1.46 so that updating it on a hardware table would only require changing one thing. https://www.mediawiki.org/wiki/Extension:Variables

Yes, you can do what the Handbook does with {{Handbook Variable}}. See the following links:
